Grandpa's Garden

Terry's dad grows a huge garden every year,
which means Terry's mom gets to
bottle it all - she's a trooper!
Well, they have been gone to Alaska
and almost everything is ready to pick.
They didn't want it go go to waste, so we
loaded up all the kids and went to St George
to get some vegetables!

These are the BEST- so juicy!
I cut up a big bowl to have in the fridge
but it didn't last very long!
Mason was so excited to pick a whole bucket of carrots!
Kelsie's favorite are the apples and
the neighbor's peaches.
We got a few buckets of tomatoes,
so we had BLT's for several days (yum!),
and I made two big bowls of fresh salsa
with the green bell peppers & onions.

Fresh Tomato Salsa
9 tomatoes, chopped
1 1/2 cups finely chopped onion
3 or 4 jalapeno peppers, seeded & finely chopped
1 green bell pepper, finely chopped
2 cloves garlic, minced
3 T. tomato paste
1 T. apple cider vinegar
1 1/2 cups chopped fresh cilantro
1 T. salt

juice of 1 lime

Thanks for the salsa! We ate it in a hurry. I think having a grandpa garden is even better than having your own :)
